Mom's love for cooking

Can't match up with her. My mom is always full of  # ideas  and always  # innovative  . She makes one of the best and tastiest  # cutlets  I have ever had. Today she came up with a  # chickencutlet  with  # mayonnaise  inside it. After frying when you cut it the mayonnaise oozes out. Fat Free Sponge Cake

My mom baked today after so many years and I just loved it. The same old sponge cake we used to get it as evening snack when we get back home from school. Even though I am into teaching and baking cakes for the past 10 years , I feel nothing can match up with her bakes. Ingredients to make this fat free sponge 2 eggs 4 tbsp of Maida / All purpose flour 4 tbsp of Sugar, 1/4 tsp Baking powder 1/4 tsp essence Method   Sieve the maida and baking powder three times Beat the eggs well along with essence to a soft peak, now add the sugar and beat in slow speed Fold the flour gently to the egg mixture till everything is combined Pour into a 5 inch baking pan which is well greased. Bake in 180 degree for 15-20mts Note:  This is a 250gms cake, double the recipe for 500 gms Please use a 5 inch cake tin for 250gms cake batter. Beating of the egg is important, the volume of the cake depends on the beating of your egg. Enjoy baking and please let me know how it turns out. Happy baking

All the way from UK for the Love of fish

I got a call on Wednesday afternoon from  Robin Honey  that he wants to come for a cooking class along with his friends the next day for a Fish Curry session. They had come down from UK to attend a wedding at Ernakulam and loved the taste of the fish curry This time I ordered the fish through  Licious  I could say that it was fresh and I had the same feel when I had cooked the fish on the first day of their product release in 2015 along with chef  Joe Manavalan . Very happy  Abhay Hanjura  and the Licious team. The freshness had made my curry tastier. Robin and friends had a good time cooking fish curry, paratha, dal, veg and Lemon Rice. Happy stay in India.
